Step 1: Prepare the Pastry Dough : In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, until dough comes together. Form into a disc, wrap in plastic, and chill for at least 30 minutes.
Step 2: Prepare the Apple Filling : In a medium bowl, toss diced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Set aside while rolling out dough.
Step 3: Roll Out Dough : On a lightly floured surface, roll dough to 1/8-inch thickness. Cut into rectangles roughly 4x6 inches.
Step 4: Assemble the Hand Pies : Spoon 1–2 tbsp apple filling onto the center of each rectangle. Fold the dough over to create a pocket, pressing edges to seal with a fork. Cut small slits on top to allow steam to escape.
Step 5: Add Topping : Brush the tops with beaten egg. Mix sugar and cinnamon, then sprinkle over each pie.
Step 6: Bake : Preheat oven to 375°F (190°C). Place hand pies on a parchment-lined baking sheet. Bake for 20–25 minutes, or until golden brown. Cool on a wire rack for 10 minutes before serving.
Step 7: Serve : Serve warm or at room temperature. Optional: drizzle with caramel sauce or serve with a scoop of vanilla ice cream.
