Ingredients
  

  • For the Salad
  • 3 cups cooked chicken, diced or shredded
  • 4 cups mixed salad greens or napa cabbage, shredded
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • ½ cup sliced cucumbers
  • ¼ cup green onions, chopped
  • 2 tablespoons chopped cilantro (optional)
  • ¼ cup toasted sesame seeds
  • ¼ cup crunchy chow mein noodles or sliced almonds
  • For the Sesame Ginger Dressing
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon lime juice
  • ½ teaspoon red pepper flakes (optional for heat)

Instructions
 

  • Step 1: Cook or grill the chicken until fully cooked. Allow it to cool slightly, then dice or shred.
  • Step 2: In a large mixing bowl, combine salad greens or napa cabbage, shredded carrots, bell pepper, cucumber, green onions, and cilantro.
  • Step 3: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, garlic, lime juice, and red pepper flakes to make the dressing.
  • Step 4: Add the cooked chicken to the salad. Pour the sesame ginger dressing over the ingredients.
  • Step 5: Toss the salad gently until all ingredients are evenly coated with the dressing.
  • Step 6: Garnish with toasted sesame seeds and crunchy chow mein noodles or sliced almonds. Serve immediately.
