Ingredients
  

  • For the Salad
  • 2 large ripe avocados, diced
  • 1 large English cucumber (or 2 small cucumbers), sliced or diced
  • ¼ small red onion, thinly sliced
  • ¼ cup chopped fresh cilantro (or parsley)
  • Salt and black pepper, to taste
  • For the Lime Dressing
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup (optional, for balance)
  • 1 small garlic clove, minced
  • ½ teaspoon cumin powder (optional, for warmth)
  • Salt and pepper, to taste

Instructions
 

  • Prepare the Produce: Wash the cucumber and slice it thinly. Dice the avocados and slice the red onion very thin for a milder flavor.
  • Mix the Dressing: In a small bowl, whisk together lime juice, olive oil, minced garlic, honey, cumin, salt, and pepper. Taste and adjust seasoning — it should be tangy and refreshing.
  • Combine the Ingredients: Place cucumber, avocado, onion, and cilantro in a large mixing bowl.
  • Add the Dressing: Drizzle the lime dressing over the salad. Toss gently with a spoon or rubber spatula to mix evenly, being careful not to crush the avocado.
  • Final Touches: Sprinkle with a little more salt, pepper, and fresh cilantro before serving. Optionally, top with chili flakes for heat.
