Ingredients
  

  • For the Shrimp:
  • 12 large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • For the Avocado Boats:
  • 2 large ripe avocados, halved and pitted
  • 1 small cucumber, finely diced
  • 1 small red bell pepper, finely diced
  • 1 tbsp red onion, finely minced
  • 1 tsp fresh lime juice
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste
  • Optional Dressing:
  • 1 tbsp Greek yogurt
  • 1 tsp lemon juice
  • Dash of hot sauce or paprika

Instructions
 

  • Cook the Shrimp: Heat olive oil in a skillet over medium heat. Season shrimp with garlic powder, paprika, salt, and pepper. Cook shrimp 2–3 minutes per side until pink and opaque. Set aside to cool slightly.
  • Prepare the Avocado Filling: In a small bowl, combine cucumber, red bell pepper, red onion, lime juice, cilantro, salt, and pepper. Toss gently.
  • Assemble the Shrimp Boats: Scoop a small amount of avocado flesh from each half to create a cavity. Mix the scooped avocado with the vegetable mixture. Fill each avocado half with the mixture, then top with cooked shrimp. Drizzle optional dressing over the top if desired.
