  • For the Sauce:
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (24 oz / 680 g) marinara sauce or tomato basil sauce
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt and black pepper, to taste
  • 1 teaspoon sugar (optional, to balance acidity)
  • For the Ricotta u0026 Spinach Mixture:
  • 1 ½ cups ricotta cheese (whole milk preferred)
  • 2 cups fresh spinach, chopped (or 1 cup frozen, thawed u0026 squeezed dry)
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For Topping:
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup Parmesan cheese, grated
  • Fresh basil or parsley, for garnish

Instructions

  • Step 1: Cook the Pasta : Bring a large pot of salted water to a boil. Add pasta and cook until al dente (1 minute less than package directions). Drain, drizzle lightly with olive oil, and set aside.
  • Step 2: Prepare the Tomato Sauce : Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent. Add garlic and cook for another 30 seconds until fragrant. Pour in marinara sauce, oregano, basil, salt, pepper, and sugar (if using). Simmer for 10 minutes, stirring occasionally, then remove from heat.
  • Step 3: Make the Ricotta u0026 Spinach Mixture :In a large bowl, combine ricotta cheese, chopped spinach, egg, Parmesan, garlic powder, salt, and pepper. Mix until smooth and creamy.
  • Step 4: Assemble the Baked Pasta : Preheat oven to 375°F (190°C). In a large mixing bowl, combine the cooked pasta with about 2 cups of the tomato sauce and half of the ricotta mixture. Stir gently to coat evenly. Spread a thin layer of sauce on the bottom of a 9x13-inch baking dish. Add half of the pasta mixture, followed by spoonfuls of the remaining ricotta mixture. Sprinkle with half of the mozzarella cheese. Repeat with the remaining pasta, sauce, and top with mozzarella and Parmesan cheese.
  • Step 5: Bake the Pasta :Cover the dish with foil and bake for 20 minutes. Remove foil and bake uncovered for another 10–15 minutes, until the cheese is golden and bubbly.
  • Step 6: Serve u0026 Garnish : Let the dish rest for 5–10 minutes before serving (this helps it set). Garnish with fresh basil or parsley. Serve warm with garlic bread or salad.
