Balsamic Glazed Salmon with Roasted Vegetables

Ingredients
  

  • For the Salmon:
  • 4 salmon fillets (5–6 oz each)
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • For the Balsamic Glaze:
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp dried Italian herbs
  • For the Roasted Vegetables:
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/2 tsp dried thyme or rosemary

Instructions
 

  • Prepare the Glaze: In a small saucepan, combine balsamic vinegar, honey, garlic, Dijon mustard, and Italian herbs. Simmer over medium heat for 8–10 minutes until reduced and slightly thickened. Set aside.
  • Prepare the Vegetables: Preheat the oven to 400°F (200°C). Toss vegetables with olive oil, salt, pepper, and dried herbs. Spread evenly on a baking sheet.
  • Roast the Vegetables: Roast vegetables for 15 minutes, stirring once halfway through.
  • Cook the Salmon: Season salmon fillets with salt and pepper. Push vegetables to one side of the baking sheet and place salmon on the other side. Brush generously with balsamic glaze.
  • Finish Baking: Return the baking sheet to the oven and bake for another 10–12 minutes, or until salmon flakes easily with a fork.
