Ingredients
  

  • For the Pizza:
  • 1 ball (about 12 oz / 350 g) pizza dough (store-bought or homemade)
  • ¾ cup barbecue sauce (use your favorite smoky or sweet variety)
  • 1 cup cooked chicken breast, shredded or diced (grilled or roasted)
  • 1 small red onion, thinly sliced
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded smoked gouda or cheddar cheese
  • 2 tablespoons fresh cilantro, chopped
  • Olive oil, for brushing
  • Cornmeal or flour, for dusting the pizza peel
  • Optional Garnishes:
  • Extra BBQ sauce drizzle
  • Crushed red pepper flakes (for spice lovers)
  • Fresh lime wedge for brightness

Instructions
 

  • Step 1: Prepare the Dough : Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat. On a lightly floured surface, stretch or roll out your pizza dough into a 12-inch circle. Transfer it to parchment paper or a pizza peel dusted with cornmeal. Lightly brush the edges of the dough with olive oil.
  • Step 2: Assemble the Pizza : Spread BBQ sauce evenly over the dough, leaving about 1 inch around the edges for the crust. Sprinkle half the cheese over the sauce. Distribute chicken pieces evenly across the pizza. Add the red onion slices on top. Sprinkle the remaining cheese (mozzarella and gouda/cheddar) evenly.
  • Step 3: Bake the Pizza : Transfer the pizza (with parchment paper) to the preheated pizza stone or baking sheet. Bake for 12–15 minutes, or until the crust is golden brown and the cheese is bubbling and slightly browned.
  • Step 4: Garnish and Serve : Remove from the oven and let it cool for a minute. Sprinkle freshly chopped cilantro on top. Optionally, drizzle with extra BBQ sauce or add a squeeze of lime for extra zest. Slice and serve warm.
