Ingredients
  

  • For the Pizza:
  • 1 pre-made pizza dough (or homemade, ~12–14 inch)
  • 1 cup cooked chicken, shredded or diced
  • ½ cup barbecue sauce (plus extra for drizzling)
  • 1 cup shredded mozzarella cheese
  • ½ cup red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil (for brushing crust)
  • Optional: ¼ cup smoked gouda or cheddar for extra flavor

Instructions
 

  • Step 1: Preheat Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
  • Step 2: Prepare Chicken: Toss cooked chicken with ½ cup barbecue sauce until fully coated.
  • Step 3: Prepare Dough: Roll out pizza dough on a floured surface to desired thickness (~12 inches). Transfer to a piece of parchment paper for easy transfer to oven. Brush the edges lightly with olive oil for a golden, crisp crust.
  • Step 4: Assemble Pizza: Spread a thin layer of BBQ sauce over the dough, leaving ½ inch around edges. Evenly distribute BBQ-coated chicken over the sauce. Add thinly sliced red onions and shredded mozzarella (and optional smoked cheese).
  • Step 5: Bake: Slide pizza (with parchment) onto the preheated pizza stone or baking sheet. Bake for 12–15 minutes, or until crust is golden and cheese is melted and bubbly.
  • Step 6: Add Fresh Cilantro: Remove pizza from oven and immediately sprinkle chopped fresh cilantro on top. Optional: drizzle extra barbecue sauce for more flavor.
