- Main Ingredients
- 1 pound pizza dough (homemade or store-bought)
- 1 cup BBQ sauce (smoky or sweet, to taste)
- 1 ½ cups cooked chicken, shredded (rotisserie or grilled)
- 1 cup mozzarella cheese, shredded
- ½ cup smoked gouda cheese, shredded (optional for depth of flavor)
- ½ large red onion, thinly sliced
- ¼ cup fresh cilantro leaves, roughly chopped
- 1 tablespoon olive oil (for brushing crust)
Step 1: Prepare the Dough : Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Roll out pizza dough on a floured surface into a 12-inch circle or rectangle.
Step 2: Assemble the Pizza : Transfer rolled dough to a parchment-lined baking sheet or pizza peel (if using stone). Brush edges lightly with olive oil for a golden crust. Spread BBQ sauce evenly over the dough, leaving about 1 inch for the crust. Scatter shredded chicken evenly on top of the sauce. Sprinkle mozzarella (and smoked gouda if using) evenly over the chicken. Arrange thin slices of red onion over the cheese.
Step 3: Bake the Pizza : Bake for 12–15 minutes, or until cheese is melted and bubbly and crust is golden brown. Remove from oven and let it rest for 2–3 minutes before slicing.
Step 4: Add Fresh Toppings : Sprinkle fresh cilantro leaves over the hot pizza before serving. Slice and enjoy immediately.
