Ingredients

  • For the Pork Chops:
  • 4 pork chops (bone-in or boneless, about 1-inch thick)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • For the Sweet and Smoky BBQ Sauce:
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp molasses (or honey)
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional, for heat)

Instructions

  • Prepare the Pork Chops: Rub pork chops with olive oil, salt, pepper, garlic powder, and smoked paprika. Let them marinate for at least 30 minutes to absorb flavor.
  • Make the BBQ Sauce: In a saucepan, combine ketchup, brown sugar, molasses, vinegar, Worcestershire, mustard, paprika, onion powder, garlic powder, and cayenne. Simmer over medium heat for 8–10 minutes until thickened.
  • Grill the Pork Chops: Preheat grill (or grill pan) to medium-high heat. Grill pork chops for 5–6 minutes per side, or until internal temperature reaches 145°F (63°C).
  • Glaze with Sauce: Brush pork chops with BBQ sauce during the last 2 minutes of cooking to create a caramelized glaze. Serve hot with extra sauce on the side.
