Beef and Bean Burrito Bowls

Ingredients
  

  • 1 lb (450g) ground beef
  • 1 cup cooked rice (white, brown, or cilantro lime rice)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • Optional toppings: shredded cheese, sour cream, guacamole, chopped cilantro, lime wedges, sliced jalapeños

Instructions
 

  • Step 1: Cook the Beef : Sauté onion and garlic, then add ground beef and cook until browned.
  • Step 2: Season the Beef : Add chili powder, cumin, smoked paprika, salt, and black pepper, and stir to coat evenly.
  • Step 3: Add Beans and Vegetables : Add black beans, corn, and diced tomatoes. Cook for 5 more minutes.
  • Step 4: Prepare Rice : Cook rice according to package instructions, optionally seasoning with lime and cilantro.
  • Step 5: Assemble Burrito Bowls : Divide rice among bowls, top with beef and bean mixture, and add desired toppings.
