Ingredients
  

  • For the Beef Filling
  • 1½ lbs (680 g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • For the Casserole Layers
  • 2 cups red enchilada sauce (store-bought or homemade)
  • 10–12 corn tortillas, cut into quarters
  • 2½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Optional Toppings
  • Sliced green onions
  • Chopped cilantro
  • Sour cream
  • Jalapeño slices

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Heat a large skillet over medium heat and cook ground beef until browned.
  • Add onion and garlic; cook until softened.
  • Stir in chili powder, cumin, paprika, salt, and pepper.
  • Grease a 9×13-inch baking dish.
  • Spread a thin layer of enchilada sauce on the bottom.
  • Add a layer of tortilla pieces, followed by beef mixture, sauce, and cheese.
  • Repeat layers until ingredients are used, finishing with cheese on top.
  • Cover with foil and bake for 25 minutes.
  • Uncover and bake another 10–15 minutes until bubbly and golden.
