Beef Goulash with Paprika Sauce

Ingredients
  

  • 2 lbs (900 g) beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons sweet paprika (preferably Hungarian)
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon caraway seeds (optional)
  • 2 tablespoons tomato paste
  • 1 can (14 oz / 400 g) diced tomatoes
  • 2 cups beef broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 1/2 teaspoon sugar (optional, to balance acidity)
  • 2 tablespoons sour cream (optional, for serving)
  • Fresh parsley, chopped, for garnish

Instructions
 

  • Step 1: Brown the Beef : Sear beef cubes in oil until golden brown on all sides. Remove from pot.
  • Step 2: Sauté Onions and Garlic : Cook onions until translucent, add garlic for 1 minute.
  • Step 3: Add Paprika and Tomato Paste : Mix in paprika and tomato paste, cooking until aromatic.
  • Step 4: Add Tomatoes and Broth : Pour in diced tomatoes and beef broth, scraping the pot.
  • Step 5: Simmer with Peppers and Spices : Return beef, add bell peppers and spices, simmer covered until tender.
  • Step 6: Garnish and Serve : Adjust seasoning and serve with sour cream and parsley.
