Step 1: Prepare the Kofta Mixture : In a large mixing bowl, combine ground beef, grated onion, minced garlic, parsley, and all spices (cumin, coriander, paprika, cinnamon, cayenne, salt, and pepper). Mix with your hands until the ingredients are well incorporated—but don’t overmix, as it can make the meat tough. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend and firm up the mixture.
Step 2: Shape the Koftas : Divide the mixture into 8 equal portions. With damp hands, form each portion into an oval or sausage shape around a metal or soaked wooden skewer. Brush lightly with olive oil to prevent sticking.
Step 3: Cook the Kebabs : Option 1 – Grill: Preheat the grill to medium-high heat. Grill kebabs for 10–12 minutes, turning occasionally, until nicely browned and cooked through. Option 2 – Oven: Preheat oven to 425°F (220°C). Place kebabs on a parchment-lined baking sheet and bake for 18–20 minutes, flipping halfway. Option 3 – Stovetop: Heat a grill pan or skillet over medium heat. Cook kebabs for 10–12 minutes, turning occasionally for even browning.
Step 4: Make the Yogurt Sauce : In a small bowl, whisk together Greek yogurt, garlic, lemon juice, olive oil, dill (or mint), salt, and pepper. Chill until ready to serve.
