Beef Teriyaki Bowls with Sesame Vegetables

Ingredients
  

  • For the Teriyaki Beef
  • 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • For the Teriyaki Sauce
  • ΒΌ cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons mirin (or substitute with rice vinegar + 1 teaspoon sugar)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
  • For the Sesame Vegetables
  • 1 tablespoon sesame oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon toasted sesame seeds
  • For Serving
  • 3 cups cooked jasmine or brown rice
  • Sliced green onions, for garnish
  • Extra sesame seeds, for garnish

Instructions
 

  • Step 1: Marinate the Beef : Combine soy sauce, rice vinegar, and cornstarch. Add beef slices and toss to coat. Let it rest for 10–15 minutes to tenderize and absorb flavor.
  • Step 2: Make the Teriyaki Sauce : In a small saucepan, combine soy sauce, honey, mirin, sesame oil, garlic, and ginger. Bring to a gentle simmer. Stir in the cornstarch-water mixture and cook until glossy and slightly thickened.
  • Step 3: Cook the Beef : Heat vegetable oil in a large skillet. Add beef and stir-fry for 3–5 minutes until browned and cooked through. Remove from the pan and set aside.
  • Step 4: Stir-Fry the Vegetables : Add sesame oil to the same skillet. Toss in broccoli, bell pepper, carrots, and zucchini. Stir-fry for about 4–5 minutes until slightly softened but still crisp. Add a splash of soy sauce and sprinkle sesame seeds.
  • Step 5: Combine and Serve : Return beef to the skillet with the vegetables. Pour in the teriyaki sauce and toss everything to coat evenly. Serve over rice, and garnish with green onions and sesame seeds.
