Ingredients
  

  • For the Burrito
  • 2 large flour tortillas
  • 3 large eggs
  • 1 cup diced potatoes (peeled or unpeeled)
  • 2 tablespoons olive oil
  • ½ cup shredded cheddar cheese (or your favorite cheese)
  • ½ cup salsa (store-bought or homemade)
  • 2 tablespoons chopped green onions
  • Salt and pepper, to taste
  • Optional toppings: avocado slices, hot sauce, cilantro
  • For Seasoning the Potatoes
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • Step 1: Cook the Potatoes : Heat 2 tablespoons of olive oil in a skillet over medium heat. Add diced potatoes, season with paprika, cumin, garlic powder, salt, and pepper. Cook for 8–10 minutes, stirring occasionally, until golden and crisp.
  • Step 2: Scramble the Eggs : Whisk eggs in a bowl with a pinch of salt and pepper. Heat a nonstick skillet over medium heat, add eggs, and cook gently while stirring until softly scrambled.
  • Step 3: Warm the Tortillas : Heat tortillas in a dry skillet or microwave for 15–20 seconds to make them pliable for wrapping.
  • Step 4: Assemble the Burritos : Place warm tortilla on a flat surface. Layer crispy potatoes, scrambled eggs, shredded cheese, green onions, and salsa. Add optional toppings such as avocado, cilantro, or hot sauce.
  • Step 5: Roll and Serve : Fold the sides of the tortilla inward, then roll from one end to the other. Serve immediately while warm.
