Ingredients

  • For the French Toast:
  • 8 slices brioche bread, thick-cut
  • 3 large eggs
  • ½ cup heavy cream or whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • Butter or oil, for cooking
  • For the Caramelized Bananas:
  • 2–3 ripe bananas, sliced into ½-inch rounds
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon (optional)
  • Pinch of salt
  • Optional Toppings:
  • Maple syrup or caramel sauce
  • Chopped nuts (pecans, walnuts, or almonds)
  • Whipped cream
  • Fresh berries

Instructions

  • Step 1: Prepare the French Toast Mixture : In a bowl, whisk together eggs, cream, sugar, vanilla, cinnamon, and salt. Set aside.
  • Step 2: Soak and Cook the Brioche : Dip each slice of brioche in the egg mixture, coating both sides. Let excess drip off. Heat a skillet or griddle over medium heat and melt butter. Cook the soaked brioche slices 2–3 minutes per side until golden brown and cooked through. Keep warm.
  • Step 3: Caramelize the Bananas : In a separate skillet, melt butter over medium heat. Add brown sugar and stir until it begins to melt. Add banana slices in a single layer, sprinkle cinnamon and a pinch of salt. Cook for 2–3 minutes per side until bananas are golden and caramelized. Be gentle to avoid mashing.
  • Step 4: Assemble the Dish : Plate French toast slices. Spoon caramelized bananas generously over the top. Add optional toppings: maple syrup, nuts, whipped cream, or berries.
