- 4 large flour tortillas (10-inch, warmed)
- 6 large eggs
- 1 tablespoon milk or cream (for fluffier eggs)
- 1 tablespoon butter or oil
- 8 oz (225 g) breakfast sausage (crumbled or links, cooked and sliced)
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/4 cup salsa (optional)
- 1 avocado, sliced (optional)
- Salt and black pepper, to taste
- Hot sauce (optional)
Cook the Sausage In a skillet over medium heat, cook the sausage until browned and fully cooked. Remove and drain excess grease if necessary.
Sauté the Vegetables In the same skillet, add diced onion and bell pepper. Cook until softened and slightly caramelized. Set aside.
Prepare the Eggs Whisk eggs with milk, salt, and pepper. Melt butter in the skillet, pour in eggs, and cook slowly, stirring gently until soft and fluffy.
Warm the Tortillas Heat tortillas in a dry skillet or microwave until pliable.
