Cajun Salmon Alfredo Pasta with Parmesan Cream Sauce

Ingredients
  

  • For the Cajun Salmon:
  • 4 salmon fillets (about 6 oz each, skin on or off as preferred)
  • 2 tbsp olive oil
  • 1½ tbsp Cajun seasoning (store-bought or homemade)
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 tbsp butter (for searing)
  • For the Alfredo Sauce:
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ cup milk (or more to thin, if needed)
  • Salt and pepper, to taste
  • ¼ tsp nutmeg (optional, for depth)
  • For the Pasta:
  • 12 oz fettuccine or linguine pasta
  • 1 tbsp olive oil
  • ½ cup reserved pasta water
  • 1 tbsp chopped parsley (for garnish)

Instructions
 

  • Step 1: Cook the Pasta : Bring a large pot of salted water to a boil. Add fettuccine and cook according to package directions until al dente. Reserve ½ cup of pasta water, then drain the pasta. Toss with a drizzle of olive oil to prevent sticking. Set aside.
  • Step 2: Prepare the Cajun Salmon : Pat salmon fillets dry with paper towels. Rub each fillet with olive oil, then season generously with Cajun seasoning, garlic powder, paprika, salt, and pepper. Heat butter in a large skillet over medium-high heat. Place the salmon fillets (skin side down if applicable) and sear for 4–5 minutes per side, depending on thickness, until cooked through and slightly crisp on the edges. Remove salmon from the skillet and set aside on a plate.
  • Step 3: Make the Alfredo Sauce :In the same skillet, reduce the heat to medium and melt 2 tbsp butter. Add minced garlic and sauté until fragrant (about 30 seconds). Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and whisk until the sauce is smooth and thickened. Season with salt, pepper, and nutmeg (if using). If the sauce is too thick, add milk or reserved pasta water a little at a time until desired consistency is reached.
  • Step 4: Combine Pasta and Sauce : Add cooked pasta to the sauce and toss until fully coated. Adjust seasoning if needed. Add a splash of pasta water if the sauce thickens too much.
  • Step 5: Assemble and Serve : Plate the creamy pasta and top with a seared Cajun salmon fillet. Garnish with chopped parsley and extra Parmesan cheese. Serve immediately while warm.
