- 1 lb potato gnocchi (fresh or shelf-stable)
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp Italian seasoning
- 2 cloves garlic, minced
- For the Sauce u0026 Toppings:
- 1 pint cherry or grape tomatoes, halved
- ½ cup chicken broth
- 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved
- ¼ cup fresh basil leaves, roughly torn
- Balsamic glaze, for drizzling (optional but highly recommended)
Cook the Chicken : Season chicken with salt, pepper, and Italian seasoning.Heat 1 tbsp olive oil in a large skillet over medium-high heat.Cook chicken for 4–5 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
Cook the Gnocchi : In the same skillet, add another 1 tbsp olive oil.Add gnocchi and cook for 2–3 minutes until lightly golden.Stir in garlic and cook for 30 seconds until fragrant.
Add Tomatoes and Broth : Add halved cherry tomatoes to the skillet with the gnocchi.Pour in chicken broth and stir, allowing tomatoes to soften and release juices (about 3–4 minutes).
Combine and Melt : Return chicken to the skillet and toss with gnocchi and tomatoes.Scatter mozzarella balls over the top.Cover skillet for 1–2 minutes until cheese begins to melt.
