1 apple, thinly sliced (Granny Smith or Honeycrisp recommended)
1 cup shredded mozzarella cheese
½ cup crumbled goat cheese or feta
1 tablespoon balsamic glaze (optional)
1 teaspoon fresh thyme leaves (optional)
Salt and pepper, to taste
Instructions
Caramelizing the Onions: Heat olive oil in a skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 15–20 minutes until onions are golden brown and caramelized.
Preparing the Flatbread: Preheat oven to 400°F (200°C) .Place flatbreads on a baking sheet. Spread caramelized onions evenly over each flatbread. Arrange apple slices on top of onions. Sprinkle shredded mozzarella and crumbled goat cheese evenly over the flatbreads. Season with salt, pepper, and fresh thyme if using.
Baking: Bake in preheated oven for 12–15 minutes, or until cheese is melted and bubbly and flatbread edges are golden brown. Optional: Drizzle with balsamic glaze before serving.
