Ingredients

  • 1 medium head of cauliflower (cut into bite-sized florets)
  • ¾ cup all-purpose flour (or gluten-free flour)
  • ¾ cup water (or milk for extra richness)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • For the Buffalo Sauce
  • ⅓ cup hot sauce (such as Frank’s RedHot)
  • 2 tbsp melted butter (or vegan butter)
  • 1 tsp honey or maple syrup (optional, to balance heat)
  • Optional for Serving
  • Ranch or blue cheese dressing
  • Celery and carrot sticks

Instructions
 

  • Step 1: Preheat the oven to 425°F (220°C) and line your baking sheet.
  • Step 2: Cut cauliflower into bite-sized florets, washing and drying them thoroughly.
  • Step 3: In a mixing bowl, whisk together flour, water, and spices into a smooth batter.
  • Step 4: Dip each floret into the batter, ensuring full coverage, and place on the baking tray.
  • Step 5: Bake for 20 minutes, flipping halfway.
  • Step 6: Meanwhile, prepare Buffalo sauce by mixing hot sauce, melted butter, and honey.
  • Step 7: Toss baked cauliflower in the Buffalo sauce until evenly coated.
  • Step 8: Return to oven for 5–10 more minutes until crisp.
  • Step 9: Serve hot with dipping sauces and crunchy veggies.
