Ingredients
  

  • For the Grits:
  • 1 cup stone-ground grits
  • 4 cups water (or half water, half milk for creamier grits)
  • 1 teaspoon salt
  • 2 tablespoons butter
  • ½ cup shredded sharp cheddar cheese (or your favorite cheese)
  • Salt and pepper, to taste
  • For the Eggs:
  • 2–3 large eggs
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • Optional Toppings:
  • Chopped chives or parsley
  • Crispy bacon bits
  • Hot sauce or paprika

Instructions
 

  • Step 1: Cook the Grits : Bring water (or water/milk mix) and salt to a boil in a medium saucepan. Slowly whisk in grits to prevent clumping. Reduce heat to low and simmer, stirring occasionally, for 15–20 minutes until thickened.
  • Step 2: Add Butter and Cheese : Stir in butter and shredded cheddar cheese until fully melted. Taste and adjust seasoning with salt and pepper. Keep warm on low heat.
  • Step 3: Fry the Eggs : Heat 1 tablespoon butter in a small skillet over medium heat. Crack eggs into the skillet and cook until whites are set and edges are golden, leaving yolks slightly runny (or cook to desired doneness). Season with salt and pepper.
  • Step 4: Serve : Spoon creamy grits onto plates. Top each serving with a butter-fried egg. Garnish with optional toppings like chives, bacon, or hot sauce. Serve immediately.
