4 flatbreads (store-bought or homemade, ~6–8 inches each)
1 tablespoon olive oil
For the Chicken:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper, to taste
½ teaspoon garlic powder
½ teaspoon paprika
For Topping:
1 cup romaine lettuce, chopped
½ cup Caesar dressing (homemade or store-bought)
½ cup grated Parmesan cheese
½ cup cherry tomatoes, halved (optional)
Croutons for garnish (optional)
Freshly ground black pepper, to taste
Instructions
Preheat oven: Preheat oven to 425°F (220°C).
Cook chicken: Rub chicken breasts with olive oil, salt, pepper, garlic powder, and paprika. Cook in a skillet over medium-high heat for 5–6 minutes per side until fully cooked (internal temperature 165°F / 74°C). Let rest for 5 minutes, then slice thinly.
Prepare flatbreads: Brush flatbreads lightly with olive oil. Place on a baking sheet.
Add cheese: Sprinkle grated Parmesan evenly on each flatbread. Bake 5–7 minutes until cheese melts slightly and edges are golden.
Assemble toppings: Top flatbreads with sliced chicken, chopped romaine, cherry tomatoes, and drizzle with Caesar dressing. Add croutons if desired. Finish with extra Parmesan and black pepper.
Serve: Serve immediately while flatbread is warm and crisp.
