Chicken Caesar Flatbreads with Parmesan

Ingredients
  

  • For the Flatbreads:
  • 4 flatbreads (store-bought or homemade, ~6–8 inches each)
  • 1 tablespoon olive oil
  • For the Chicken:
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • For Topping:
  • 1 cup romaine lettuce, chopped
  • ½ cup Caesar dressing (homemade or store-bought)
  • ½ cup grated Parmesan cheese
  • ½ cup cherry tomatoes, halved (optional)
  • Croutons for garnish (optional)
  • Freshly ground black pepper, to taste

Instructions
 

  • Preheat oven: Preheat oven to 425°F (220°C).
  • Cook chicken: Rub chicken breasts with olive oil, salt, pepper, garlic powder, and paprika. Cook in a skillet over medium-high heat for 5–6 minutes per side until fully cooked (internal temperature 165°F / 74°C). Let rest for 5 minutes, then slice thinly.
  • Prepare flatbreads: Brush flatbreads lightly with olive oil. Place on a baking sheet.
  • Add cheese: Sprinkle grated Parmesan evenly on each flatbread. Bake 5–7 minutes until cheese melts slightly and edges are golden.
  • Assemble toppings: Top flatbreads with sliced chicken, chopped romaine, cherry tomatoes, and drizzle with Caesar dressing. Add croutons if desired. Finish with extra Parmesan and black pepper.
  • Serve: Serve immediately while flatbread is warm and crisp.
