Ingredients
  

  • For the Salad
  • 3 cups cooked pasta (rotini, farfalle, penne, or fusilli)
  • 2 cooked chicken breasts (grilled, baked, or rotisserie), sliced or cubed
  • 2 cups romaine lettuce, chopped
  • 1/2 cup Parmesan cheese, grated or shredded
  • 1 cup cherry tomatoes, halved (optional)
  • 1/2 cup croutons (add more for extra crunch)
  • 1/4 cup red onion, thinly sliced (optional)
  • For the Caesar Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream or Greek yogurt
  • 2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Boil pasta until al dente, drain, and rinse under cold water.
  • Cook or prepare chicken, then slice or cube.
  • In a bowl, whisk together all Caesar dressing ingredients.
  • In a large bowl, combine pasta, chicken, Parmesan, and tomatoes.
  • Add dressing and toss well.
  • Add romaine lettuce and croutons just before serving.
  • Chill for 15–20 minutes for best flavor.
