Ingredients

  • For the Salad:
  • 6 cups Romaine lettuce or mixed salad greens, chopped
  • 2 cups cooked chicken breast, grilled or pan-seared, sliced
  • 4 slices bacon, cooked crisp and crumbled
  • 2 large hard-boiled eggs, chopped or halved
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced (optional)
  • ½ cup shredded cheddar cheese or crumbled blue cheese
  • Salt and black pepper, to taste
  • For the Honey Mustard Dressing:
  • ¼ cup Dijon mustard
  • 3 tbsp honey
  • 3 tbsp olive oil (or mayonnaise for creamier texture)
  • 2 tbsp apple cider vinegar or lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions

  • Step 1: Cook the Bacon : Place bacon strips in a cold skillet. Turn heat to medium and cook until crispy, flipping as needed. Drain on paper towels and crumble once cooled.
  • Step 2: Prepare the Eggs : Place eggs in a saucepan, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10–12 minutes, then cool in ice water. Peel and chop or slice the eggs.
  • Step 3: Cook the Chicken : Season chicken breasts with salt, pepper, and a little olive oil. Grill or sear in a skillet over medium heat for about 5–6 minutes per side, until fully cooked. Let rest, then slice thinly.
  • Step 4: Make the Honey Mustard Dressing : In a small bowl or jar, whisk together Dijon mustard, honey, olive oil, vinegar, garlic, salt, and pepper until smooth. Taste and adjust seasoning or sweetness as desired. Chill until ready to use.
  • Step 5: Assemble the Salad : Place chopped lettuce in a large salad bowl or arrange on a platter. Line up the toppings in neat rows: chicken, bacon, eggs, avocado, tomatoes, cucumber, and cheese. Sprinkle with salt and pepper.
  • Step 6: Dress and Toss : Drizzle the honey mustard dressing generously over the salad just before serving, or serve it on the side. Gently toss to coat evenly if desired.
