  • For the Biscuit Crust:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 1 cup buttermilk (plus extra for brushing)

  • Step 1: Prepare the Chicken Filling : In a large skillet or saucepan, melt the butter over medium heat.Add the diced onion and cook for 3–4 minutes until softened Stir in minced garlic and cook for another 30 seconds until fragrant.Add frozen vegetables and cook for 2 minutes.Sprinkle the flour over the vegetables and stir well to coat.Gradually whisk in the chicken broth, ensuring there are no lumps.Add cream, salt, pepper, thyme, and paprika. Stir until the sauce thickens (about 5–7 minutes). Stir in the cooked chicken and remove from heat.
  • Step 2: Make the Biscuit Dough : Preheat oven to 400°F (200°C). In a large mixing bowl, combine flour, baking powder, baking soda, and salt.Add cold cubed butter and cut it in using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.Pour in the buttermilk and stir until just combined (do not overmix).
  • Step 3: Assemble the Cobbler : Pour the chicken filling into a greased 9x13-inch baking dish.Drop spoonfuls of biscuit dough evenly over the top (you can also flatten slightly for more coverage). Brush biscuit tops lightly with buttermilk for extra browning.
