Step 1: Prepare the Meat : Pat cube steaks dry with paper towels. Season both sides generously with salt and pepper. If steaks are thick, pound lightly with a meat mallet to tenderize further.
Step 2: Prepare the Dredging Station : In one shallow bowl, combine flour, garlic powder, onion powder, paprika, cayenne, salt, and pepper. In another bowl, whisk together eggs and buttermilk.
Step 3: Bread the Steaks : Dredge each steak in the seasoned flour, shaking off excess. Dip into the egg mixture, coating completely. Return the steak to the flour mixture for a second coating — this double-dip ensures extra crunch. Set the coated steaks aside for 5 minutes to let the coating adhere.
Step 4: Fry the Steaks : In a large skillet or cast-iron pan, heat about ½ inch of vegetable oil over medium-high heat until shimmering (around 350°F / 175°C). Fry each steak for 3–4 minutes per side, until golden brown and crispy. Remove and place on a wire rack or paper towel-lined plate to drain excess oil. Pour off all but 3 tablespoons of oil from the pan — these will be used to make the gravy.
Step 5: Make the Country Gravy : Keep the pan over medium heat. Add 3 tablespoons of flour to the pan drippings and whisk constantly for about 1 minute, until golden. Slowly pour in the milk, whisking continuously to avoid lumps. Cook for 3–5 minutes, until the gravy thickens. Season with salt and lots of freshly cracked black pepper to taste. (If too thick, thin with a splash more milk. If too thin, cook a few minutes longer.)
Step 6: Serve : Place each crispy steak on a plate. Spoon warm country gravy generously over the top. Serve immediately with your favorite sides!
