Chicken Ramen Stir-Fry with Vegetables

Ingredients
  

  • For the Stir-Fry
  • 2 packs of instant ramen noodles (discard seasoning packets)
  • 2 cups cooked chicken, sliced or shredded
  • 1 tablespoon vegetable oil
  • 1 medium carrot, julienned
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 small zucchini, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • 1 teaspoon sesame seeds for garnish

Instructions
 

  • Cook ramen noodles according to package instructions, drain, and set aside.
  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add garlic and ginger, sauté for 30 seconds until fragrant.
  • Add the cooked chicken and stir-fry for 2–3 minutes.
  • Add all the vegetables and cook for 4–5 minutes, stirring constantly, until they are tender-crisp.
  • Add the cooked ramen noodles to the skillet.
  • Pour in soy sauce, oyster sauce (if using), and sesame oil. Toss everything together until evenly coated.
  • Season with black pepper to taste.
  • Remove from heat and garnish with sliced green onions and sesame seeds.
