Ingredients
  

  • For Chicken Tikka Bites:
  • 500g boneless chicken breast or thighs, cut into 1-inch cubes
  • 1/2 cup thick yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes
  • Optional: bell peppers and onions for skewering
  • For Yogurt Dipping Sauce:
  • 1/2 cup plain yogurt
  • 1 tablespoon chopped cilantro
  • 1/2 teaspoon roasted cumin powder
  • Salt and pepper to taste
  • Optional: a squeeze of lemon juice

Instructions
 

  • Step 1: Prepare the Marinade : In a mixing bowl, combine yogurt, lemon juice, vegetable oil, ginger-garlic paste, red chili powder, turmeric, garam masala, cumin powder, coriander powder, salt, and pepper. Mix thoroughly to form a smooth marinade.
  • Step 2: Marinate the Chicken : Add chicken cubes to the marinade, coating each piece evenly. Cover and refrigerate for 1–2 hours (overnight marination enhances flavor).
  • Step 3: Assemble Skewers : Preheat grill, oven, or stovetop pan. Thread chicken pieces alternately with bell peppers and onions on skewers.
  • Step 4: Cook the Chicken : Grill method: Grill on medium-high heat for 10–12 minutes, turning occasionally until chicken is cooked through and slightly charred. Oven method: Preheat oven to 400°F (200°C). Place skewers on a baking sheet lined with foil and bake for 12–15 minutes, turning halfway. Pan method: Cook in a non-stick pan over medium heat with a little oil for 10–12 minutes, turning carefully.
  • Step 5: Prepare Yogurt Dipping Sauce : Mix yogurt, chopped cilantro, roasted cumin powder, salt, pepper, and lemon juice in a small bowl. Adjust seasoning to taste.
