Step 1: Prepare the Salmon : Pat the salmon fillets dry with paper towels and season with salt, pepper, and soy sauce. Heat 1 tbsp sesame oil in a large skillet over medium-high heat. Sear salmon for about 3–4 minutes per side until golden brown and cooked through. Remove from the skillet and set aside to rest.
Step 2: Cook the Noodles ; Bring a large pot of salted water to a boil. Cook noodles according to package instructions until just al dente. Drain and toss lightly with a drizzle of sesame oil to prevent sticking.
Step 3: Prepare the Sauce Base : In the same skillet used for the salmon, add 1 tbsp sesame oil. Add minced garlic and grated ginger; sauté for 30 seconds until fragrant. Stir in chili garlic sauce, soy sauce, oyster sauce, rice vinegar, honey, and broth. Let the sauce simmer for 1–2 minutes to thicken slightly.
Step 4: Add Bok Choy : Add the bok choy to the skillet and stir-fry for 2–3 minutes until tender but still crisp. Add cooked noodles and toss well to coat evenly in the sauce.
Step 5: Combine and Serve : Flake the cooked salmon gently into large pieces and add it back to the skillet. Toss gently to combine, ensuring the salmon absorbs the sauce without breaking apart. Garnish with chopped green onions and sesame seeds. Serve hot in bowls and enjoy!
