Chili Garlic Salmon Noodles with Bok Choy

Ingredients
  

  • For the Salmon:
  • 4 salmon fillets (about 5–6 oz each), skin removed
  • Salt and black pepper, to taste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp chili flakes (optional for heat)
  • For the Noodles:
  • 8 oz (225 g) egg noodles, rice noodles, or soba noodles
  • 2 tbsp sesame oil or neutral oil
  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp chili garlic sauce (adjust to taste)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional for depth)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • ¼ cup chicken or vegetable broth (or water)
  • 3–4 baby bok choy, halved or chopped
  • 2 green onions, chopped
  • Sesame seeds, for garnish

Instructions
 

  • Step 1: Prepare the Salmon : Pat the salmon fillets dry with paper towels and season with salt, pepper, and soy sauce. Heat 1 tbsp sesame oil in a large skillet over medium-high heat. Sear salmon for about 3–4 minutes per side until golden brown and cooked through. Remove from the skillet and set aside to rest.
  • Step 2: Cook the Noodles ; Bring a large pot of salted water to a boil. Cook noodles according to package instructions until just al dente. Drain and toss lightly with a drizzle of sesame oil to prevent sticking.
  • Step 3: Prepare the Sauce Base : In the same skillet used for the salmon, add 1 tbsp sesame oil. Add minced garlic and grated ginger; sauté for 30 seconds until fragrant. Stir in chili garlic sauce, soy sauce, oyster sauce, rice vinegar, honey, and broth. Let the sauce simmer for 1–2 minutes to thicken slightly.
  • Step 4: Add Bok Choy : Add the bok choy to the skillet and stir-fry for 2–3 minutes until tender but still crisp. Add cooked noodles and toss well to coat evenly in the sauce.
  • Step 5: Combine and Serve : Flake the cooked salmon gently into large pieces and add it back to the skillet. Toss gently to combine, ensuring the salmon absorbs the sauce without breaking apart. Garnish with chopped green onions and sesame seeds. Serve hot in bowls and enjoy!
