Ingredients
  

  • For the Shrimp Marinade:
  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1–2 chipotle peppers in adobo, minced
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp cumin
  • Salt and black pepper to taste
  • For the Tacos:
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage (green or purple)
  • ½ cup fresh cilantro, chopped
  • ½ cup diced red onion (optional)
  • ½ avocado, sliced
  • For the Creamy Drizzle:
  • ¼ cup sour cream or Greek yogurt
  • 1 tsp lime juice
  • ½ tsp chipotle powder or adobo sauce
  • Pinch of salt

Instructions
 

  • Marinate the Shrimp: In a medium bowl, combine olive oil, lime juice, minced chipotle peppers, smoked paprika, garlic powder, cumin, salt, and pepper. Add shrimp and toss to coat evenly. Let marinate for 10–15 minutes.
  • Prepare the Creamy Drizzle: In a small bowl, mix sour cream, lime juice, chipotle powder or adobo sauce, and a pinch of salt. Set aside.
  • Cook the Shrimp: Heat a skillet over medium-high heat. Add shrimp in a single layer and cook 2–3 minutes per side until pink and opaque. Remove from heat.
  • Warm the Tortillas: Warm tortillas in a dry skillet, oven, or microwave until pliable.
  • Assemble the Tacos: Place shrimp on tortillas. Top with shredded cabbage, diced red onion, avocado slices, and chopped cilantro. Drizzle with the creamy lime-chipotle sauce.
  • Serve: Serve immediately with lime wedges on the side for extra brightness.
