Ingredients

  • For the Chocolate Chia Pudding
  • 2 cups milk of choice (almond, coconut, oat, or regular milk)
  • 6 tablespoons chia seeds
  • 3 tablespoons cocoa powder
  • 3 tablespoons maple syrup, honey, or sweetener of choice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Berry Topping
  • 1 cup mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 1 teaspoon lemon juice (optional)
  • 1 teaspoon maple syrup (optional)

Instructions

  • Mix Wet Ingredients: In a medium bowl, pour the milk and whisk in sweetener, vanilla, and a pinch of salt.
  • Add Cocoa Powder: Sift in the cocoa powder to avoid lumps and whisk until smooth.
  • Add Chia Seeds: Stir in chia seeds thoroughly, ensuring they are evenly dispersed.
  • First Chill: Place the mixture in the refrigerator. After 10–15 minutes, stir again to prevent the seeds from sinking to the bottom.
  • Full Chill: Refrigerate for at least 3 hours or overnight until the pudding thickens.
  • Prepare Berries: Wash and cut berries if needed. Toss with lemon juice and optional sweetener.
  • Assemble: Spoon the pudding into serving cups and top with the fresh berry mixture.
  • Serve Cold: Enjoy straight from the fridge for best texture.
