Ingredients
  

  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (Italian seasoned or plain)
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2–3 tbsp olive oil or vegetable oil for frying
  • For the Marinara Sauce:
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 tsp dried basil (optional)
  • 1 tsp dried oregano (optional)
  • Salt and black pepper, to taste
  • For Topping:
  • 1–1½ cups shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • Fresh basil, chopped (optional, for garnish)

Instructions
 

  • Prepare the Chicken: Flatten chicken breasts to even thickness (about ½ inch) using a meat mallet. Season with salt and pepper.
  • Bread the Chicken: Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese. Dredge each chicken breast in flour, then dip in eggs, then coat with breadcrumb mixture, pressing lightly to adhere.
  • Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Fry the chicken breasts for 3–4 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
  • Assemble the Dish: Preheat oven to 375°F (190°C). Spread ½ cup marinara sauce on the bottom of a baking dish. Place fried chicken breasts on top of the sauce. Spoon remaining marinara sauce over the chicken. Sprinkle mozzarella and Parmesan evenly over each breast.
  • Bake: Bake in preheated oven for 15–20 minutes, until cheese is melted and bubbly.
  • Serve: Garnish with fresh basil if desired. Serve hot with spaghetti, garlic bread, or a side salad.
