  • 2 lbs ground beef (80/20 blend for juiciness)
  • 1 cup breadcrumbs (plain or Italian-style)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • ½ cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 teaspoon dried thyme (or Italian seasoning)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • For the Savory Tomato Glaze
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • 1 teaspoon Dijon mustard (optional, for extra tang)

Instructions
 

  • Step 1: Prepare the Oven : Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • Step 2: Mix the Meatloaf : In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, ketchup, thyme, salt, pepper, and parsley.Mix gently with your hands or a wooden spoon until just combined (do not overmix, or the meatloaf will be dense).
  • Step 3: Shape the Meatloaf : Transfer the mixture to the prepared pan or baking sheet.Shape into a loaf, about 8x4 inches.
  • Step 4: Prepare the Glaze: In a small bowl, whisk together ketchup, brown sugar, vinegar, and Dijon mustard. Spread half the glaze evenly over the top of the meatloaf.
  • Step 5: Bake the Meatloaf : Bake uncovered for 45 minutes.Remove from oven, spread the remaining glaze on top, and return to bake for another 15 minutes, until internal temperature reaches 160°F (70°C).
  • Step 6: Rest and Serve : Let the meatloaf rest for 10 minutes before slicing.This helps it hold its shape and remain juicy.
