Dry Ingredients:
- All-purpose flour – 1 ½ cups
- Baking soda – 1 tsp
- Salt – ½ tsp
Wet Ingredients:
- Unsalted butter – ½ cup (softened)
- Granulated sugar – ½ cup
- Brown sugar – ½ cup, packed
- Creamy peanut butter – ½ cup
- Egg – 1 large
- Vanilla extract – 1 tsp
Add-Ins:
- Peanut butter chips – 1 cup (plus extra for topping)
Preheat and Prep Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
Mix Dry Ingredients In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
Cream Wet Ingredients In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy. Add peanut butter and mix until well combined. Beat in egg and vanilla extract.
Combine the Dough Gradually add dry ingredients into the wet mixture. Mix until just combined – do not overmix. Fold in peanut butter chips.
Shape the Cookies Scoop about 1–1.5 tbsp of dough per cookie. Roll into balls and place on prepared baking sheet, leaving 2 inches apart. Optionally press a few extra peanut butter chips on top for presentation.
Bake Bake for 10–12 minutes, or until edges are golden but centers look slightly soft. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
