Ingredients
  

  • 4 medium russet potatoes, peeled and diced into ½-inch cubes
  • 2 tablespoons olive oil or butter
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon fresh rosemary, chopped (or ½ tsp dried)
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried)
  • ½ teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • Optional garnish: chopped parsley or chives

Instructions
 

  • Step 1: Prep the Potatoes : Peel and dice potatoes into ½-inch cubes. Rinse and pat dry to remove moisture, which helps them crisp up.
  • Step 2: Cook the Potatoes : Heat oil or butter in a large skillet over medium heat. Add potatoes, season with salt, pepper, and smoked paprika. Cook 15–20 minutes, stirring occasionally, until golden brown and crispy.
  • Step 3: Sauté Onion and Garlic : Push potatoes to the side. Add diced onion, cook 2–3 minutes until soft. Add minced garlic, cook 1 minute until fragrant.
  • Step 4: Add Herbs : Stir in fresh or dried rosemary and thyme. Cook 2–3 minutes to allow flavors to combine.
  • Step 5: Serve : Sprinkle chopped parsley or chives on top. Serve immediately with eggs, bacon, or as a side for any breakfast or brunch dish.
