- 1 cup fresh lump crab meat (or imitation crab, chopped)
- 1 large ripe mango, diced
- 1 small cucumber, finely chopped
- 1/2 red bell pepper, diced
- 1/4 red onion, thinly sliced
- 1 avocado, sliced (optional)
- 2 tablespoons fresh cilantro or mint, chopped
- Mixed greens or butter lettuce (optional for serving)
- For the Lime Dressing
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon grated ginger
- 1 teaspoon soy sauce or fish sauce (optional for depth)
- Salt and pepper to taste
Dice the mango and cucumber into small cubes.
Chop the red bell pepper and thinly slice the onion.
Place the fresh crab meat in a large mixing bowl.
Add mango, cucumber, bell pepper, onion, and chopped cilantro or mint.
