Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt or sour cream
  • Zest of 2 oranges
  • 1/4 cup freshly squeezed orange juice
  • 1 cup fresh or frozen cranberries
  • Citrus Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed orange juice
  • 1 teaspoon orange zest (optional)

Instructions
 

  • Step 1: Preheat Oven : Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  • Step 2: Mix Dry Ingredients : In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • Step 3: Mix Wet Ingredients : In another bowl, whisk together melted butter, sugar, eggs, vanilla extract, yogurt, orange zest, and orange juice until smooth.
  • Step 4: Combine Wet and Dry Ingredients : Add the wet ingredients to the dry ingredients and fold gently until just combined. Carefully fold in cranberries. Do not overmix.
  • Step 5: Fill Muffin Cups : Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  • Step 6: Bake Muffins : Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
  • Step 7: Prepare Glaze ; In a small bowl, whisk together powdered sugar, orange juice, and optional orange zest until smooth. Adjust consistency with more juice for thinner glaze or more powdered sugar for thicker glaze.
  • Step 8: Glaze Muffins : Drizzle glaze over the cooled muffins and allow it to set before serving.
