- 1 cup stone-ground grits
- 4 cups water (or half water, half milk for extra creaminess)
- ¼ tsp salt
- 2 tbsp unsalted butter
- ½ cup shredded cheddar cheese (or a mix of cheddar and pepper jack)
- For the Cajun Shrimp:
- 1 lb (450 g) large shrimp, peeled and deveined
- 2 tbsp olive oil or butter
- 1–2 tsp Cajun seasoning (adjust to taste)
- 1 tsp smoked paprika
- 2 garlic cloves, minced
- Salt and pepper, to taste
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
Cook the Grits: In a medium saucepan, bring 4 cups of water (or water + milk) to a boil. Slowly whisk in grits and reduce heat to low. Cover and cook, stirring occasionally, for 15–20 minutes until thick and creamy. Stir in butter and cheddar cheese until melted and smooth. Season with salt to taste.
Prepare the Shrimp: Pat shrimp dry and season with Cajun seasoning, smoked paprika, salt, and pepper.
Cook the Shrimp: In a large skillet, heat olive oil or butter over medium-high heat. Add garlic and sauté 30 seconds until fragrant. Add shrimp and cook 2–3 minutes per side until pink and opaque. Drizzle with fresh lemon juice and sprinkle with parsley.
