Ingredients

For the Fettuccine Alfredo:

  • 400 g fettuccine pasta
  • 4 tbsp unsalted butter
  • 2 cups heavy cream (or thick cream)
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced (optional for added depth)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch of nutmeg (optional, enhances creaminess)

For Garnish:

  • Extra Parmesan cheese, grated
  • Fresh parsley, finely chopped

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain pasta.
  • Prepare the Alfredo Sauce: In a large skillet or pan, melt the butter over medium heat. Add garlic (if using) and sauté for about 1 minute until fragrant. Pour in the heavy cream and simmer gently for 3–4 minutes, stirring constantly.
  • Add the Cheese: Lower the heat and gradually whisk in Parmesan cheese until fully melted and the sauce is smooth. Season with salt, pepper, and a tiny pinch of nutmeg.
  • Combine Pasta and Sauce: Add the cooked fettuccine into the sauce. Toss well until the pasta is fully coated. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  • Serve and Garnish: Plate the creamy fettuccine Alfredo. Garnish with extra Parmesan and parsley before serving.
