Ingredients

  • For the Pasta:
  • 12 oz (340 g) fettuccine pasta
  • Salt (for pasta water)
  • For the Alfredo Sauce:
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese (plus extra for garnish)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp nutmeg (optional, adds warmth)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta : Bring a large pot of salted water to boil. Cook fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain pasta and set aside.
  • Prepare the Alfredo Sauce : In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 1 minute until fragrant (don’t brown it). Pour in heavy cream and bring to a gentle simmer.
  • Add Cheese u0026 Seasonings : Lower heat and stir in Parmesan cheese. Whisk until smooth and creamy. Season with salt, pepper, and nutmeg (if using).
  • Combine Pasta u0026 Sauce : Add drained pasta to the skillet. Toss well to coat the fettuccine evenly in the sauce. If the sauce is too thick, add a splash of reserved pasta water.
  • Serve u0026 Garnish : Plate pasta immediately. Garnish with extra Parmesan and fresh parsley.
