- 2 tablespoons olive oil or butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups fresh spinach, packed (or 2 cups frozen)
- 2 cups green peas (fresh or frozen)
- 3 cups vegetable or chicken broth
- 1 cup water (optional to adjust consistency)
- ½ cup heavy cream, coconut milk, or milk of choice
- ½ teaspoon black pepper
- Salt to taste
- 1 teaspoon lemon juice (optional, enhances brightness)
- Optional toppings: croutons, cream drizzle, chili flakes, grated parmesan
Heat olive oil or butter in a large pot over medium heat.
Add the chopped onion and cook until softened, about 4–5 minutes.
Stir in the garlic and cook for 1 minute until fragrant.
Add the spinach and peas. Cook for 2 minutes until the spinach begins to wilt.
Pour in the broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
Remove from heat and blend the soup until completely smooth.
Return the soup to the pot and stir in the cream.

Heat gently for 2–3 minutes (do not boil).
