Ingredients
  

  • 2 tablespoons olive oil or butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups fresh spinach, packed (or 2 cups frozen)
  • 2 cups green peas (fresh or frozen)
  • 3 cups vegetable or chicken broth
  • 1 cup water (optional to adjust consistency)
  • ½ cup heavy cream, coconut milk, or milk of choice
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 teaspoon lemon juice (optional, enhances brightness)
  • Optional toppings: croutons, cream drizzle, chili flakes, grated parmesan

Instructions
 

  • Heat olive oil or butter in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 4–5 minutes.
  • Stir in the garlic and cook for 1 minute until fragrant.
  • Add the spinach and peas. Cook for 2 minutes until the spinach begins to wilt.
  • Pour in the broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Remove from heat and blend the soup until completely smooth.
  • Return the soup to the pot and stir in the cream.
  • Season with salt, pepper, and lemon juice.
  • Heat gently for 2–3 minutes (do not boil).
  • Serve warm with your favorite toppings.
