Creamy Sun-Dried Tomato Salmon with Garlic Cream Sauce

Ingredients
  

  • 4 salmon fillets, skin on or off
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes in oil, drained and sliced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red chili flakes, optional
  • Fresh basil or parsley, chopped, for garnish

Instructions
 

  • Step 1: Pat the salmon fillets dry and season both sides with salt and black pepper.
  • Step 2: Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and sear for 4 to 5 minutes per side until golden and just cooked through. Remove and set aside.
  • Step 3: Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
  • Step 4: Stir in sun-dried tomatoes and cook for 1 minute to release their flavor.
  • Step 5: Pour in cream and broth, stirring to combine. Bring to a gentle simmer.
  • Step 6: Add Parmesan cheese, Italian seasoning, and chili flakes. Stir until the sauce thickens slightly.
  • Step 7: Return salmon to the skillet and spoon sauce over the fillets. Simmer for 3 to 5 minutes until salmon is fully cooked and coated in sauce.
  • Step 8: Garnish with fresh herbs and remove from heat.
