Ingredients
  

  • For the Dish:
  • 1 package (9 oz / 250 g) cheese tortellini (fresh or frozen)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped (optional)
  • 1 cup cherry tomatoes, halved
  • ½ cup vodka
  • ¾ cup tomato puree or crushed tomatoes
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp dried oregano or Italian seasoning
  • ¼ tsp red pepper flakes (optional, for a little heat)
  • Salt and black pepper to taste
  • Fresh basil leaves, for garnish

Instructions
 

  • Step 1: Cook the Tortellini : Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and toss with a drizzle of olive oil to prevent sticking. Set aside.
  • Step 2: Prepare the Sauce Base ;Heat olive oil in a large skillet over medium heat. Add minced garlic and shallot; sauté until fragrant and lightly golden (about 1–2 minutes). Add cherry tomatoes and cook until they begin to blister and release their juices (about 3–4 minutes).
  • Step 3: Add the Vodka : Carefully pour in the vodka and let it simmer for about 2 minutes, allowing the alcohol to cook off. Stir in the tomato puree and season with salt, pepper, oregano, and red pepper flakes. Simmer the sauce for 5–6 minutes until slightly thickened.
  • Step 4: Make It Creamy : Reduce heat to low and slowly stir in the heavy cream. Add Parmesan cheese and whisk until smooth and creamy. Taste and adjust seasoning as needed.
  • Step 5: Combine Tortellini and Sauce : Add the cooked tortellini to the skillet and toss gently to coat with sauce. Simmer for 2–3 minutes, allowing the tortellini to absorb the flavors.
  • Step 6: Garnish and Serve : Garnish with fresh basil leaves and an extra sprinkle of Parmesan before serving.
