1 package (9 oz / 250 g) cheese tortellini (fresh or frozen)
2 tbsp olive oil
2 cloves garlic, minced
1 small shallot, finely chopped (optional)
1 cup cherry tomatoes, halved
½ cup vodka
¾ cup tomato puree or crushed tomatoes
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp dried oregano or Italian seasoning
¼ tsp red pepper flakes (optional, for a little heat)
Salt and black pepper to taste

Instructions
Step 1: Cook the Tortellini : Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and toss with a drizzle of olive oil to prevent sticking. Set aside.
Step 2: Prepare the Sauce Base ;Heat olive oil in a large skillet over medium heat. Add minced garlic and shallot; sauté until fragrant and lightly golden (about 1–2 minutes). Add cherry tomatoes and cook until they begin to blister and release their juices (about 3–4 minutes).
Step 3: Add the Vodka : Carefully pour in the vodka and let it simmer for about 2 minutes, allowing the alcohol to cook off. Stir in the tomato puree and season with salt, pepper, oregano, and red pepper flakes. Simmer the sauce for 5–6 minutes until slightly thickened.
Step 4: Make It Creamy : Reduce heat to low and slowly stir in the heavy cream. Add Parmesan cheese and whisk until smooth and creamy. Taste and adjust seasoning as needed.
Step 5: Combine Tortellini and Sauce : Add the cooked tortellini to the skillet and toss gently to coat with sauce. Simmer for 2–3 minutes, allowing the tortellini to absorb the flavors.
Step 6: Garnish and Serve : Garnish with fresh basil leaves and an extra sprinkle of Parmesan before serving.
