For the Casserole:
- 1 large head cauliflower (about 6 cups florets), cut into bite-sized pieces
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 3 cups milk (whole or 2%)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika (smoked for extra flavor)
- Salt and black pepper, to taste
- 1 ½ cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
For the Topping:
- 1 cup breadcrumbs (panko or regular)
- 2 tbsp butter, melted
- 2 tbsp fresh parsley, chopped (optional)
Optional Spooky Garnish:
- Black olives (to cut into “spiders”)
- Sliced red bell pepper or pimentos (to make “eyes”)
- Swirl of hot sauce for “blood” effect
Preheat oven to 375°F (190°C). Steam cauliflower until just tender.
Make cheese sauce with butter, flour, milk, and cheeses.
Combine cauliflower and sauce, then transfer to a casserole dish.
Top with breadcrumb mixture and bake until golden and bubbly.
Decorate with spooky garnishes before serving.
