Ingredients
  

  • For the Broccoli Tots:
  • 2 cups broccoli florets (fresh or frozen)
  • 1 large egg
  • ½ cup breadcrumbs (panko or regular)
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons finely chopped onion
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional for Extra Crispiness:
  • Olive oil spray for baking

Instructions
 

  • Step 1: Prepare the Broccoli : Bring a pot of salted water to a boil. Add broccoli florets and blanch for 2–3 minutes until just tender. Drain well and pat dry with a clean towel to remove excess moisture. Finely chop the broccoli or pulse it in a food processor until it resembles small rice-like pieces.
  • Step 2: Mix the Ingredients : In a mixing bowl, combine chopped broccoli, breadcrumbs, cheeses, onion, garlic powder, salt, and pepper. Add the beaten egg and mix until the mixture holds together. If it feels too wet, add a bit more breadcrumbs.
  • Step 3: Shape the Tots : Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with olive oil. Scoop about 1 tablespoon of mixture and shape it into small oval tots with your hands. Place them evenly on the baking sheet.
  • Step 4: Bake Until Golden : Lightly spray the tops of the tots with olive oil for extra crispiness. Bake for 20–25 minutes, flipping halfway through, until golden brown and crisp on all sides.
