  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 2 cups fresh spinach, roughly chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (to mix with cornstarch)

Instructions
 

  • Prepare the vegetables: Dice onions, chop carrots, slice celery, and mince garlic.
  • Add base ingredients: Place vegetables, broth, seasonings, and chicken into the crockpot.
  • Slow cook: Let everything cook until chicken is tender.
  • Shred chicken: Remove chicken breasts and shred with two forks.
