Ingredients
  

  • 4 large leeks, white and light green parts only, sliced and rinsed well
  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • Optional garnish: chopped chives or parsley

Instructions
 

  • Step 1: Clean and slice leeks carefully, removing all dirt.
  • Step 2: Peel and dice potatoes into even pieces.
