- 2 tbsp olive oil (optional, for searing)
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes (packed in oil, drained and chopped)
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional, for heat)
- To Finish
- 3 cups fresh spinach, roughly chopped
- 2 tbsp fresh basil, chopped (optional, for garnish)
Optional sear: Season chicken with salt and pepper. Heat oil in a skillet and sear chicken for 2–3 minutes per side until golden (optional, but adds flavor).
Add to slow cooker: Place chicken in the crockpot. Add garlic, broth, heavy cream, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir gently to combine.
Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
Add spinach: About 15 minutes before serving, stir in chopped spinach. Let it wilt into the sauce.
