Ingredients
  

  • For the Chicken
  • 4–6 boneless, skinless chicken breasts (or thighs)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (optional, for searing)
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional, for heat)
  • To Finish
  • 3 cups fresh spinach, roughly chopped
  • 2 tbsp fresh basil, chopped (optional, for garnish)

Instructions
 

  • Optional sear: Season chicken with salt and pepper. Heat oil in a skillet and sear chicken for 2–3 minutes per side until golden (optional, but adds flavor).
  • Add to slow cooker: Place chicken in the crockpot. Add garlic, broth, heavy cream, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir gently to combine.
  • Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
  • Add spinach: About 15 minutes before serving, stir in chopped spinach. Let it wilt into the sauce.
  • Serve: Garnish with fresh basil and extra Parmesan if desired.
